red pitaya: seeds collected dried on paper towel and stored til later use
heating device used, dish heater, slow cooker w double boiler heat management

Black Sapote

  1. The black sapote (Diospyros digyna), also known as the chocolate pudding fruit tree, is a type of persimmon tree native to Mexico. Hardy in USDA zone 10b, it's a slow-grower that eventually reaches up to 80 feet at maturity -- typically five or six years when grown from seed. It survives in a variety of soil types, but does best in moist, sandy loam or well-drained sand. Fruit ripens in the winter in most areas, turning dark brown or black with a taste similar to chocolate pudding.


En France, on le trouve notamment dans les départements du Gard et de l'Ardèche. Le kaki est issu d'un arbre appelé le plaqueminier. Il en existe plus de 3 000 variétés dont la « Rojo Brilante » que l'on trouve dans la région de Valence, en Espagne, et qui bénéficie de l'Appellation d'Origine Protégée.
